Baked avocado fries [Vegetarian]

Avocado fries. Yep -- it seems the list of amazing things you can do with avocados never seems to end. And that list includes turning them into a delicious version of french fries. And they are deeeeeeelicious!

This recipe gives instructions for frying the avocado fries. However, I'm not a fan of fried food and prefer to bake things as an alternative whenever possible. So, for a healthier version, simply place the breaded avocado slices on a baking sheet lined with parchment paper, and place in an oven preheated to 450 degrees. Bake them for 15 minutes, or until the bread crumbs have turned golden.

Serve with different dipping sauces, such as lemon zest aioli or a sour cream and dill sauce. Also try them with a tomato salsa such as tomato and basil, or a pico de gallo. These avocado fries make a wonderful side dish at summer barbeques and dinners.

Okay, I am now offcially disgusted with myself. I took a healthy avocado, dipped it in egg, breaded it and then fried it. Yes, I did, and it was totally delicious. And then I made a little dip of sriracha sauce and mayonnaise. I've been reading various websites over the past couple of months looking a recipes for avocado fries thinking to myself "who would eat that?" Well, it turns out, me. And my husband. We both loved it. Wow, it was really good, and not something I'm going to repeat any time soon. It felt incredibly decadent, but hey, isn't that what summer is all about? I eat so many fruits and vegetables at this time of year, that a little indulgence seems okay.

You can add herbs to the bread crumbs if you like, but I just let the creamy flavour of the avocado do all the talking.

Avocado Fries

Oil For Frying
2 avocado
1 egg, beaten
1 cup bread crumbs
1/2 tsp salt

1. In a medium-sized bowl, mix together the bread crumbs and salt. Set it aside. Cut the avocados in half, remove the pit and then slice them vertically into 1 inch wedges Scoop the wedges out carefully with a spoon against the edge of the skin. Set them aside.

2. Dredge the avocado in the beaten egg, then in the breadcrumb mixture.

3. In a large frying pan heat the vegetable oil until it shimmers. Carefully place them in the hot oil and fry them for about 2-3 minutes, or until golden brown, turning them once. Remove them with a slotted spoon and place them on a plate lined with paper towels to absorb the excess oil. ALTERNATIVELY: Preheat your oven to 450 degrees. Place the breaded avocado slices on a baking sheet lined with parchment paper. Bake for 15 minutes or until the bread crumbs have turned golden.

4. Transfer them to a serving plate and serve them immediately, with dipping sauces or salsas.
