Dark and Stormy's creamier cousin from Beloved in Greenpoint, Brooklyn is more complex than Gosling's tempest, but it's every bit as easy to drink. Sweetened ginger juice brings a funky spice and milky mouthfeel and bittersweet Cynar rounds it all out.

Note:You can adapt this recipe using a spicy ginger beer. Hidalgo recommends Fever Tree. To make ginger juice, combine 1 cup ginger juice (juiced in a blender and strained) with 5 ounces sugar. Stir until dissolved. To make with ginger beer in lieu of ginger juice, replace club soda with ginger beer.

Ingredients

  • 1 ounce Smith & Cross Jamaican rum
  • 1 ounce Cynar
  • 3/4 ounce sweetened ginger juice (see note above)
  • 1/2 ounce fresh squeezed juice from 1 lime
  • Club soda (see note above)
  • Peychaud's bitters

Procedures

  1. Combine rum, Cynar, ginger juice, and lime juice in shaker with a small handful of pebble-sized pieces of cracked ice. Shake until fully chilled and diluted (about 15 seconds).

  2. Strain into iced filled Collins glass, top with club soda and three dashes Peychaud's bitters, serve.
