In this alcohol-free libation, the rhubarb shrub mimics the flavor and intensity that alcohol would bring to a gimlet. We prefer this in a 6 or 7-ounce glass without too much seltzer to dilute.

Ingredients 2 ounces Rhurbarb Shrub 1/2 ounce fresh juice from 1 lime 1/2 ounce maple syrup, preferably grade B Seltzer, chilled Procedures Add rhubarb shrub, lime juice, and maple syrup to a cocktail shaker and fill with ice. Shake until well chilled, about 20 seconds. Strain into two 6 or 7 ounce glasses, add ice, top with seltzer, and serve immediately.
