Adapted from Paul McGee of RPM Italian in Chicago, this cocktail is tart from fresh lime and pink grapefruit, with a touch of bitterness from Campari.

If you like your cocktails on the sweeter side, you may want to increase the simple syrup slightly depending on the sweetness of your grapefruit.

Note: To make simple syrup, combine 1 cup water with 1 cup sugar in a small saucepan and heat over medium heat, stirring constantly, until sugar is dissolved. Cool before using. Simple syrup will keep in a sealed container in the refrigerator for up to 5 days.

Ingredients

  • 9 ounces silver tequila
  • 3 ounces Campari
  • 4 1/2 ounces fresh pink grapefruit juice, from 3 to 4 grapefruits
  • 4 1/2 ounces lime juice, from about 9 limes
  • 2 ounces simple syrup (or more to taste, see note above)
  • 3 ounces ginger beer
  • Garnish: 6 lime wheels

Procedures

  1. Combine tequila, Campari, grapefruit juice, lime juice, and simple syrup in a serving pitcher. Add 2 cups ice and stir for 15 seconds. Add ginger beer and stir gently.

  2. Divide cocktail between 6 glasses and garnish with lime wheel.
